Tuscan White Bean and Sausage Soup

Ingredients
1 lb Italian sausage
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
1 can (15 oz) cannellini beans, drained and rinsed
1 can (15 oz) diced tomatoes
4 cups chicken stock
1 tsp dried oregano
1 tsp dried basil
1/2 tsp red pepper flakes
Salt and pepper to taste
2 cups fresh spinach
1/4 cup grated Parmesan cheese
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add Italian sausage and cook until browned, breaking into small pieces.
3. Add onion, garlic, carrots, and celery; sauté until softened.
4. Stir in cannellini beans, diced tomatoes, chicken stock, oregano, basil, and red pepper flakes.
5. Bring to a simmer; cover and cook for 30 minutes.
6. Stir spinach into soup until wilted.
7. Season with salt and pepper.
8. Serve hot, garnished with Parmesan cheese.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Gently reheat in a pot over medium heat, stirring occasionally, until warmed through.
