Ingredients

1 lb Italian sausage
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
6 cups chicken broth
1 can (28 oz) whole tomatoes, crushed by hand
1/2 tsp red pepper flakes
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1 package (9 oz) cheese tortellini
4 cups kale, chopped
1/2 cup heavy cream
1/4 cup grated Parmesan cheese

Instructions

1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
2. Add onion and garlic, sauté until the onion is soft and translucent.
3. Stir in chicken broth, crushed tomatoes, red pepper flakes, basil, oregano, salt, and black pepper. Bring to a boil.
4. Add tortellini and kale, reduce heat, and simmer until tortellini is tender, about 8-10 minutes.
5. Stir in heavy cream and let it heat through.
6. Serve hot with grated Parmesan cheese on top.

Storage

Store leftover soup in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot on the stove over medium heat until warmed through, or in the microwave on medium power.
