Tuscan Tomato Toast

A traditional Italian appetizer featuring ripe tomatoes, garlic, and basil on toasted bread, perfect for summer gatherings and offering a fresh, authentic taste of Tuscany.

Ingredients

4 slices of rustic Italian bread
2 large ripe tomatoes, diced
2 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup extra virgin olive oil
Salt to taste
Black pepper to taste

Instructions

1. Preheat your oven to 400°F (200°C).
2. Place the slices of bread on a baking sheet and brush both sides with olive oil.
3. Toast the bread in the oven for about 8-10 minutes, or until golden brown and crispy.
4. In a bowl, combine the diced tomatoes, minced garlic, chopped basil, remaining olive oil, salt, and pepper. Mix well.
5. Once the bread is toasted, remove from the oven and let cool slightly.
6. Spoon the tomato mixture onto each slice of bread evenly.
7. Serve immediately for the best taste and texture.

Storage

Store the tomato mixture separately in an airtight container in the refrigerator for up to 2 days. Store toasted bread in a paper bag at room temperature for up to a day.

Reheating

To reheat, place the bread slices in a preheated oven at 350°F (175°C) for 5 minutes or until warm. Top with the cold tomato mixture right before serving.
