Tuscan Harvest Soup

Ingredients

1 tbsp olive oil
1 lb Italian sausage, sliced
1 large onion, diced
3 cloves garlic, minced
4 cups chicken broth
2 cups water
3 cups kale, chopped
2 cups butternut squash, diced
1 cup cannellini beans, drained and rinsed
1 cup heavy cream
1/2 tsp red pepper flakes
Salt and pepper to taste
1/2 cup grated Parmesan cheese
Crusty bread for serving

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add sliced sausage and cook until browned.
3. Stir in diced onion and minced garlic; cook until onion is translucent.
4. Pour in chicken broth and water, bringing to a simmer.
5. Add chopped kale and diced butternut squash, cooking until tender.
6. Stir in cannellini beans and heavy cream; season with red pepper flakes, salt, and pepper.
7. Simmer for 10 minutes until flavors meld together.
8. Serve hot, garnished with Parmesan cheese and crusty bread.

Storage
