Ingredients

1 lb Italian fennel sausage
3 tbsp olive oil
2 red bell peppers, sliced
1 yellow bell pepper, sliced
1 large onion, sliced
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp red pepper flakes
Salt, to taste
Black pepper, to taste
1/4 cup fresh basil leaves, chopped
1 tbsp balsamic vinegar

Instructions

1. Heat olive oil in a large skillet over medium heat.
2. Add the sausages and cook until browned on all sides, about 8 minutes. Remove and set aside.
3. In the same skillet, add the onions and cook until translucent, about 5 minutes.
4. Add the garlic, red pepper flakes, and oregano. Stir for 1 minute.
5. Add the bell peppers and cook until tender-crisp, about 8 minutes.
6. Return the sausages to the skillet and pour in the balsamic vinegar. Stir to combine.
7. Season with salt and black pepper to taste.
8. Garnish with fresh basil before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or microwave on high for 2 minutes.
