Ingredients

4 boneless skinless chicken thighs
2 tbsp olive oil
1 large onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 cloves garlic, minced
1/2 cup dry white wine
1 can (14 oz) crushed tomatoes
1/2 cup chicken broth
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
1/4 cup capers
1/4 cup black olives, sliced
Fresh parsley for garnish

Instructions

1. Heat olive oil in a large skillet over medium-high heat.
2. Season chicken thighs with salt and pepper and brown them in the skillet for about 5 minutes on each side.
3. Remove the chicken from the skillet and set aside.
4. In the same skillet, add sliced onions and bell peppers; cook until softened, about 5 minutes.
5. Add garlic and sauté for an additional minute.
6. Deglaze the pan with white wine, scraping up any browned bits from the bottom.
7. Stir in crushed tomatoes, chicken broth, oregano, and basil.
8. Return chicken to the skillet, cover, and simmer for 25 minutes.
9. Add capers and olives, then simmer uncovered for another 10 minutes.
10. Garnish with fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat until warmed through.
