Ingredients
12 oz elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
8 oz sharp cheddar cheese, grated
4 oz Gruyere cheese, grated
3 oz fresh spinach, chopped
1 tbsp truffle oil
Salt and pepper to taste
1/2 cup panko breadcrumbs
1/4 cup Parmesan cheese, grated
Instructions
1. Preheat your oven to 350°F (175°C).
2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
3. In a large saucepan, melt the butter over medium heat. Add the flour, whisking continuously, for about 1 minute.
4. Gradually whisk in the milk and heavy cream, cooking until the mixture is thickened and bubbly.
5. Reduce the heat to low and add the sharp cheddar and Gruyere cheese, stirring until melted and smooth.
6. Stir in the chopped spinach and truffle oil, allowing the spinach to wilt.
7. Season with salt and pepper to taste.
8. Combine the cooked macaroni with the cheese sauce, mixing until well coated.
9. Transfer the macaroni mixture into a greased baking dish.
10. In a small bowl, mix the panko breadcrumbs with the Parmesan cheese and sprinkle evenly over the macaroni.
11. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.
12. Let cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.

To reheat, place in a preheated oven at 350°F (175°C) for 15-20 minutes or until heated through.
