Truffle Brioche Grilled Cheese

Ingredients

4 slices of Brioche bread
6 oz Brie cheese, sliced
2 tbsp unsalted butter, softened
1 tbsp truffle oil
1/4 cup arugula leaves
1/4 tsp freshly ground black pepper

Instructions

1. Preheat a non-stick skillet over medium heat.
2. Lightly butter one side of each brioche slice and drizzle with truffle oil.
3. Place brie slices evenly on the unbuttered side of two brioche slices.
4. Top with arugula and a sprinkle of black pepper.
5. Close sandwiches with the remaining brioche slices, buttered side out.
6. Grill sandwiches in the skillet for 3-4 minutes on each side, pressing gently with a spatula, until golden brown and the cheese has melted.
7. Let cool slightly before serving.

Storage

Store leftover sandwiches in an airtight container in the refrigerator for up to 2 days.

Reheat in a skillet over low heat until warmed through and crispy, or use a toaster oven for 5 minutes at 350°F.
