Ingredients

1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/2 cup finely chopped onions
1/4 cup chopped cilantro
1 tsp salt
1/2 tsp black pepper
1 tbsp vegetable oil
1 cup pineapple juice
1/4 cup tamarind paste
1/3 cup brown sugar
1/4 cup rice vinegar
2 tbsp soy sauce
1 red bell pepper, chopped
1 cup pineapple chunks
2 tbsp cornstarch mixed with 2 tbsp water

Instructions

1. Preheat oven to 375°F.
2. In a bowl, mix ground beef, breadcrumbs, egg, onions, cilantro, salt, and pepper.
3. Shape into 1-inch meatballs.
4. Heat oil in a skillet over medium heat. Brown meatballs.
5. Transfer meatballs to a baking dish.
6. In a saucepan, combine pineapple juice, tamarind paste, brown sugar, rice vinegar, and soy sauce.
7. Bring to a simmer, then add bell pepper and pineapple chunks.
8. Stir in cornstarch mixture to thicken.
9. Pour sauce over meatballs in baking dish.
10. Bake for 25 minutes until meatballs are cooked through.

Storage

Store leftover meatballs in an airtight container in the refrigerator for up to 3 days.

Reheating
