Tropical Sunset Hummingbird Cake

Ingredients
3 cups all-purpose flour
2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
3 large eggs, beaten
1 cup vegetable oil
1 teaspoon vanilla extract
1 can (8 oz) crushed pineapple, undrained
1 cup mashed ripe bananas
1 cup sweetened shredded coconut
1 cup chopped pecans
1 package (8 oz) cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup toasted coconut for garnish
1/2 cup sliced almonds for garnish
Instructions
1. Preheat oven to 350°F. Grease and flour three 9-inch round cake pans.
2. In a large bowl, combine flour, sugar, baking soda, cinnamon, ginger, and salt.
3. Add eggs, oil, and vanilla to the dry ingredients and mix until combined.
4. Stir in pineapple, bananas, shredded coconut, and pecans until evenly distributed.
5. Divide batter evenly among prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
6. Cool cakes in pans on a wire rack for 10 minutes, then turn out onto racks to cool completely.
7. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
8. Frost the cooled cake layers, stacking them carefully. Spread remaining frosting on the top and sides of the cake.
9. Garnish with toasted coconut and sliced almonds.
10. Serve fresh or store according to instructions.
Storage
Store the cake in an airtight container in the refrigerator for up to 5 days.
Reheating
To reheat, bring the cake to room temperature or warm slices in the microwave for 20-30 seconds.
