Tropical Pulled Pork with Pineapple

A unique twist on classic pulled pork, infused with tropical flavors like pineapple and coconut, perfect for a summer BBQ or a weeknight dinner.

Ingredients

4 lbs pork shoulder
2 cups pineapple juice
1 cup coconut milk
1 cup BBQ sauce
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp garlic powder
1 tbsp onion powder
1 tsp ginger powder
1 tsp smoked paprika
1 tsp black pepper
1 tsp salt
1 cup diced pineapple
2 tbsp cornstarch
2 tbsp water

Instructions

1. Season the pork shoulder with salt, pepper, garlic powder, onion powder, ginger powder, and smoked paprika.
2. In a slow cooker, combine pineapple juice, coconut milk, BBQ sauce, soy sauce, and brown sugar.
3. Place the seasoned pork in the slow cooker, and pour the pineapple juice mixture over it.
4. Cook on low for 8 hours or until the pork is tender and easily shredded.
5. Remove the pork from the slow cooker and shred using two forks.
6. Add diced pineapple to the slow cooker, mix cornstarch with water, and stir it into the sauce to thicken.
7. Return the shredded pork to the sauce and stir to combine.
8. Cook for an additional 30 minutes on low to let the flavors meld.

Storage

Store leftover pulled pork in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat, stirring occasionally, until heated through. Add a splash of pineapple juice if needed to moisten.
