Ingredients
3 lbs pork shoulder
2 cups pineapple juice
1 cup coconut milk
1/4 cup soy sauce
1/4 cup brown sugar
1 tbsp garlic powder
1 tbsp onion powder
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp cayenne pepper
1/4 tsp black pepper
Salt to taste
1 tbsp olive oil
1 cup chopped fresh pineapple
Instructions
1. Prepare the pork shoulder by patting it dry and seasoning it generously with salt, black pepper, garlic powder, onion powder, smoked paprika, and ground cumin.
2. In a large skillet, heat olive oil over medium-high heat and sear the pork on all sides until golden brown.
3. Transfer the pork to a slow cooker.
4. In a bowl, mix pineapple juice, coconut milk, soy sauce, brown sugar, and cayenne pepper; pour over the pork.
5. Add chopped fresh pineapple to the slow cooker.
6. Cover and cook on low for 8-10 hours or until the pork is tender and shreds easily with a fork.
7. Once cooked, remove the pork and shred it with two forks. Return the shredded pork to the slow cooker and mix with the juices.
8. Serve warm on buns, rice, or alongside your favorite tropical sides.
