Tropical Pineapple Fried Rice

Ingredients
2 tbsp vegetable oil
1 lb shrimp, peeled and deveined
1/2 tsp salt
1/4 tsp black pepper
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 cup pineapple chunks
3 cups cooked jasmine rice
1/4 cup coconut milk
2 tbsp soy sauce
2 tsp sesame oil
2 green onions, sliced
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
Instructions
1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
2. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3 minutes. Remove shrimp from skillet and set aside.
3. In the same skillet, add remaining tablespoon of oil. Add onion and garlic; sauté until fragrant, about 2 minutes.
4. Add bell pepper and pineapple chunks, cooking until the pepper is slightly tender, about 3 minutes.
5. Stir in the cooked rice, coconut milk, soy sauce, and sesame oil. Mix well to combine.
6. Return the shrimp to the skillet and toss everything together. Cook for an additional 2 minutes until all ingredients are heated through.
7. Remove from heat and garnish with green onions and cilantro.
8. Serve with lime wedges on the side.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat, adding a splash of water or coconut milk to avoid drying out.
