Tropical Pineapple Delight Cake

Ingredients
1 cup granulated sugar
1/2 cup unsalted butter, at room temperature
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/4 cup pineapple juice
1 teaspoon lime zest
1/2 cup confectioners' sugar
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
3. Add eggs, one at a time, beating well after each addition.
4. Mix in vanilla extract.
5. In another bowl, sift together flour, baking powder, baking soda, and salt.
6. Gradually add the dry ingredients to the creamed mixture, alternating with pineapple juice, beginning and ending with flour mixture.
7. Fold in crushed pineapple, shredded coconut, and lime zest.
8. Pour the batter into the prepared pan and smooth the top.
9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
10. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
11. For the glaze, combine confectioners' sugar and 1 tablespoon of pineapple juice, drizzle over the cooled cake.
Storage
Store in an airtight container at room temperature for up to 3 days.
Reheating
Reheat individual slices in the microwave for about 15 seconds, or enjoy at room temperature.
