Tropical Paradise Granola Bars

Ingredients

2 cups rolled oats
1/2 cup dried pineapple, chopped
1/2 cup unsweetened coconut flakes
1/3 cup macadamia nuts, chopped
1/3 cup honey
1/4 cup coconut oil
1/4 cup brown sugar
1/2 tsp vanilla extract
1/4 tsp salt

Instructions

1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
2. In a large bowl, combine the rolled oats, dried pineapple, coconut flakes, and macadamia nuts.
3. In a small saucepan, combine honey, coconut oil, brown sugar, and salt over low heat. Stir until everything is melted and mixed well.
4. Remove from heat and stir in vanilla extract.
5. Pour the melted mixture over the dry ingredients and stir until well coated.
6. Press the mixture firmly into the prepared baking dish.
7. Bake for 20-25 minutes or until the edges are golden brown.
8. Allow to cool completely in the pan before lifting out and cutting into bars.

Storage

Store in an airtight container at room temperature for up to one week or refrigerate for up to two weeks.

Reheating

These granola bars are best enjoyed at room temperature and do not require reheating.
