Tropical Mint Mango Salsa

A refreshing variation of traditional mango salsa, enhanced with a hint of mint and lime, perfect for summer gatherings and sure to delight your taste buds.

Ingredients

2 ripe mangoes, diced
1 small red onion, finely chopped
1/2 cup red bell pepper, diced
1/4 cup fresh mint leaves, finely chopped
2 tbsp fresh lime juice
1/2 tsp salt
1 jalapeno, seeded and minced
1/4 cup cilantro, chopped
1 tbsp olive oil

Instructions

1. Dice the mangoes and place them in a large bowl.
2. Add the finely chopped red onion, red bell pepper, mint leaves, and cilantro to the bowl.
3. Add the minced jalapeno for a spicy kick, or leave it out for a milder version.
4. Drizzle with fresh lime juice and olive oil.
5. Season with salt and stir gently to combine all the ingredients.
6. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Storage

Store the salsa in an airtight container in the refrigerator for up to 3 days.

Reheating

Best enjoyed fresh, but if needed, bring to room temperature and stir before serving.
