Tropical Mango Crab Salad

A refreshing and vibrant tropical mango crab salad perfect for summer gatherings, combining succulent crab meat with the sweetness of ripe mango and a zesty lime dressing.

Ingredients

8 oz fresh crab meat
1 ripe mango, diced
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 lime, juiced
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 avocado, sliced
4 oz mixed greens
1/4 cup toasted coconut flakes

Instructions

1. In a large bowl, combine crab meat, mango, red bell pepper, red onion, and cilantro.
2. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper to create the dressing.
3. Pour the dressing over the crab mixture and gently toss to combine.
4. Arrange mixed greens on a serving platter and top with the crab mixture.
5. Garnish with avocado slices and toasted coconut flakes before serving.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

Best enjoyed fresh, but you can gently reheat in a microwave for 10-15 seconds if desired.
