Tropical Macaroni Salad with Mango and Lime

Ingredients

8 oz elbow macaroni
1 cup diced ripe mango
1/2 cup chopped red bell pepper
1/4 cup diced red onion
1/4 cup chopped fresh cilantro
1/2 cup mayonnaise
2 tbsp lime juice
1 tbsp honey
1 tsp salt
1/2 tsp black pepper

Instructions

1. Cook the macaroni according to the package instructions until al dente. Drain and rinse with cold water.
2. In a large mixing bowl, combine the mayonnaise, lime juice, honey, salt, and black pepper. Stir until well blended.
3. Add the cooked macaroni, mango, red bell pepper, red onion, and cilantro to the bowl. Toss until all ingredients are coated with the dressing.
4. Chill in the refrigerator for at least 1 hour before serving to enhance the flavors.

Storage

Store the salad in an airtight container in the refrigerator for up to 3 days.
