Ingredients
4 boneless chicken breasts (approximately 1.5 lbs)
1 tsp salt
1/2 tsp black pepper
2 tbsp vegetable oil
1 cup pineapple juice
1/4 cup soy sauce
1 tbsp brown sugar
2 garlic cloves, minced
1/2 inch fresh ginger, grated
1 red bell pepper, sliced
1 cup pineapple chunks
2 green onions, sliced
Instructions
1. Season chicken breasts with salt and black pepper.
2. Heat vegetable oil in a large skillet over medium-high heat.
3. Add chicken breasts to the skillet and cook until golden brown on both sides, about 4 minutes per side.
4. In a bowl, mix together pineapple juice, soy sauce, brown sugar, minced garlic, and grated ginger.
5. Pour the mixture over the chicken in the skillet.
6. Add bell pepper slices and pineapple chunks to the skillet.
7. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and tender.
8. Garnish with sliced green onions before serving.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place chicken in a microwave-safe dish and heat on medium power until warmed through, or reheat in a skillet over low heat.
