Tropical Fusion Fajitas combine the rich flavors of the Caribbean with the classic Mexican dish, offering a flavorful, island-inspired twist that captivates the taste buds.

Ingredients

1 lb chicken breast, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large red onion, sliced
1 cup pineapple chunks
2 tbsp olive oil
2 tsp Caribbean jerk seasoning
1 tsp garlic powder
1 tsp onion powder
1 lime, juiced
8 flour tortillas
Salt, to taste
Pepper, to taste
1/4 cup cilantro, chopped

Instructions

1. In a large bowl, combine sliced chicken, Caribbean jerk seasoning, garlic powder, onion powder, lime juice, salt, and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add chicken mixture to the skillet and sauté until cooked through, about 8 minutes.
4. Add bell peppers and onion to the skillet, cook until tender, approximately 5 minutes.
5. Stir in pineapple chunks and cook for an additional 2 minutes.
6. Warm tortillas in a separate pan.
7. Assemble fajitas by placing cooked mixture in tortillas and top with chopped cilantro.

Storage

Store leftover fajitas in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat fajitas in a skillet over medium heat until warmed through, about 5 minutes.
