Ingredients
1 cup crushed pineapple (drained)
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter (softened)
2 large eggs
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup shredded coconut
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Stir in vanilla extract and drained crushed pineapple.
5. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
6. Gradually add dry ingredients to the wet ingredients, mixing until just combined.
7. Fold in shredded coconut gently.
8. Pour batter into prepared loaf pan and smooth the top.
9. Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Storage
Store the pineapple bread in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
Reheating
To reheat, preheat your oven to 300°F (150°C) and warm the bread for 10 minutes, or until heated through.
