Tropical Coconut Dream Cake

Ingredients
2 1/4 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
1 cup coconut milk
1/2 cup shredded coconut
3 large eggs, room temperature
1 tablespoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 cup pineapple juice
For Frosting:
1/2 cup unsalted butter, softened
3 cups powdered sugar
1/4 cup coconut milk
1 teaspoon vanilla extract
1/2 cup toasted coconut flakes for garnish
Instructions
1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Stir in vanilla extract and pineapple juice.
5. In another bowl, whisk together flour, baking powder, and salt.
6. Gradually add the dry ingredients to the wet mixture, alternating with coconut milk.
7. Fold in the shredded coconut.
8. Divide the batter evenly between the prepared cake pans.
9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
10. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
11. For the frosting, beat butter until creamy, then gradually add powdered sugar and coconut milk while mixing.
12. Stir in vanilla extract until smooth.
13. Assemble the cake by layering with frosting and covering the top and sides.
14. Garnish with toasted coconut flakes before serving.
Storage
Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
Reheating
To reheat, allow slices to come to room temperature or warm slightly in a microwave on low power for 10-15 seconds.
