Tropical Coconut Banana Pudding

Ingredients

2 cups whole milk
1/2 cup coconut milk
2/3 cup granulated sugar
1/4 cup all-purpose flour
3 large egg yolks
1 teaspoon vanilla extract
1/4 teaspoon salt
3 ripe bananas, sliced
1 cup sweetened shredded coconut
30 vanilla wafers
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon coconut extract
1/4 cup toasted coconut flakes

Instructions

1. In a medium saucepan, combine whole milk, coconut milk, and granulated sugar. Heat over medium heat until the sugar dissolves.
2. In a separate bowl, whisk together flour, egg yolks, vanilla extract, and salt. Slowly add the hot milk mixture to the egg yolk mixture, whisking constantly.
3. Return the mixture to the saucepan and cook over low heat, stirring frequently, until thickened.
4. Remove from heat and let cool slightly.
5. Layer a third of the vanilla wafers, banana slices, and shredded coconut in a 9x9 inch baking dish.
6. Pour half of the coconut custard over the layers.
7. Repeat the layers, ending with a layer of custard.
8. Chill in the refrigerator for at least 4 hours.
9. Whip heavy cream, powdered sugar, and coconut extract until soft peaks form. Spread over the chilled pudding.
10. Sprinkle toasted coconut flakes on top before serving.

Storage

Cover with plastic wrap and refrigerate for up to 3 days.

Reheating

Reheat in the microwave for 30 seconds to 1 minute until slightly warm, if desired.
