Ingredients

1 lb ground beef
1 lb chicken breast
2 tbsp taco seasoning
1 tbsp olive oil
1 red bell pepper
1 yellow bell pepper
1 zucchini
8 corn tortillas
1 cup shredded cheese
1 cup salsa
1/2 cup sour cream
1/4 cup chopped cilantro
1 lime, cut into wedges
Salt and pepper to taste

Instructions

1. In a skillet, heat olive oil over medium heat and add ground beef. Cook until browned, about 7 minutes. Add taco seasoning and stir well. Remove from heat.
2. In another skillet, cook chicken breast with taco seasoning until no longer pink, about 8 minutes per side. Shred or chop into pieces.
3. Roast sliced bell peppers and zucchini in a preheated oven at 400°F for 15 minutes until tender.
4. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
5. Assemble tacos by placing a mix of beef, chicken, and roasted veggies in each tortilla.
6. Top with shredded cheese, salsa, sour cream, cilantro, and a squeeze of lime.
7. Serve immediately.

Storage

Store leftover fillings separately in airtight containers in the refrigerator for up to 3 days.

Reheating

Reheat taco fillings in a skillet over medium heat until warmed through, or microwave in a covered dish for 1-2 minutes.
