Traditional Turkey Soup

A heartwarming turkey soup that captures the essence of comfort in every spoonful, perfect for using leftover turkey and warming your soul.

Serves: 6

Ingredients

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 carrots, sliced
3 celery stalks, sliced
8 cups turkey stock
2 cups cooked turkey, shredded
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper to taste
1 cup egg noodles
2 tablespoons fresh parsley, chopped

Instructions

1. In a large pot, heat olive oil over medium heat.
2. Add onion and garlic, sauté until onion is translucent.
3. Stir in carrots and celery, cooking for another 5 minutes.
4. Pour in turkey stock and bring to a boil.
5. Add shredded turkey, thyme, rosemary, bay leaf, salt, and pepper.
6. Reduce heat and simmer for 20 minutes.
7. Stir in egg noodles and cook until tender, around 7-8 minutes.
8. Remove bay leaf and stir in fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over low heat until warmed through.
