Traditional Strawberry Pie

Ingredients
1 1/4 cups all-purpose flour
1/2 cup cold unsalted butter, cubed
1/4 teaspoon salt
3 tablespoons ice water
1 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
4 cups fresh strawberries, hulled and halved
1 tablespoon lemon juice
1/2 cup whipped cream for topping
Instructions
1. Preheat your oven to 425°F (220°C).
2. In a mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
3. Stir in ice water, a tablespoon at a time, until the dough holds together. Roll out the dough to fit a 9-inch pie plate.
4. Place crust in the pie plate and flute the edges. Prick the bottom and sides of the crust with a fork.
5. Bake the crust for 10-12 minutes or until lightly golden. Let it cool.
6. In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens.
7. Remove from heat and stir in the lemon juice.
8. Arrange strawberries in the baked pie crust and pour the glaze over them, spreading evenly.
9. Refrigerate for at least 2 hours or until set.
10. Serve chilled with a dollop of whipped cream if desired.
Storage
Store the pie covered in the refrigerator for up to 3 days.
Reheating
Enjoy the pie cold straight from the refrigerator. If preferred warm, allow it to sit at room temperature for 10-15 minutes.
