Traditional Spice Cake

Ingredients
2 1/2 cups all-purpose flour
1 cup granulated sugar
1 cup brown sugar
1 cup unsalted butter, softened
1 cup buttermilk
3 large eggs
2 tsp baking soda
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp salt
1 tsp vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt.
3. In a separate large bowl, cream together the butter and both sugars until light and fluffy.
4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
5. Gradually blend in the dry ingredients alternately with the buttermilk, starting and ending with the flour mixture.
6. Pour the batter into the prepared pan and smooth the top with a spatula.
7. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the cake to cool in the pan on a wire rack before serving.
Storage
Store the cooled cake in an airtight container at room temperature for up to 4 days.
Reheating
To reheat, warm individual slices in the microwave for 15-20 seconds or in a preheated 325°F oven for 5-7 minutes.
