Traditional Spanish Paella

Ingredients

1 lb chicken thighs, skinless
1/2 lb chorizo sausage, sliced
12 large shrimp, peeled and deveined
1/2 lb mussels, cleaned
1/2 lb clams, cleaned
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, finely chopped
4 cups chicken broth
1 1/2 cups short grain rice
1/2 tsp saffron threads
1 cup frozen peas
4 cloves garlic, minced
1/4 cup olive oil
1 lemon, cut into wedges
Salt and pepper to taste
2 tbsp fresh parsley, chopped

Instructions

1. Heat olive oil in a large paella pan over medium-high heat.
2. Season chicken thighs with salt and pepper, then brown in the pan on both sides. Remove and set aside.
3. Add chorizo slices and cook until browned. Remove and set aside.
4. In the same pan, sauté onion and garlic until soft.
5. Add red and green bell peppers and cook for another 2-3 minutes.
6. Stir in the rice and saffron threads, coating the rice with the vegetables and oil.
7. Pour in the chicken broth and bring to a simmer. Return chicken thighs and chorizo to the pan.
8. Arrange shrimp, mussels, and clams over the top. Cover and simmer for 15-20 minutes, until the rice is tender and seafood is cooked.
9. Add peas and cook for another 2 minutes.
10. Remove from heat, garnish with chopped parsley, and serve with lemon wedges.

Storage

Store leftover paella in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat paella in a skillet over medium heat until warmed through, or in a microwave-safe dish in the microwave, stirring occasionally.
