4 oz pancetta, diced
2 large eggs
2 large egg yolks
1 cup grated Parmesan cheese

Instructions

1. Bring a large pot of salted water to a boil and cook spaghetti until al dente.
2. In a large skillet, heat olive oil over medium heat and sauté pancetta until crisp, about 3-4 minutes.

5. Drain the spaghetti, reserving 1 cup of pasta water.
6. Add hot spaghetti to the skillet with pancetta and garlic, stirring well.
7. Remove from heat and quickly mix in the egg mixture, stirring continuously to create a creamy sauce. Add reserved pasta water as needed to reach desired consistency.
8. Season with salt and black pepper to taste, and serve immediately.
