Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 cup finely chopped onion
1 egg
3/4 cup buttermilk
1 tbsp melted butter
Vegetable oil for frying
Instructions
1. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, garlic powder, and onion powder.
2. Stir in the chopped onion, egg, buttermilk, and melted butter until the batter is well combined.
3. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
4. Carefully drop rounded tablespoons of the batter into the hot oil, frying a few at a time without overcrowding.
5. Fry until golden brown and crispy, about 3-4 minutes per batch.
6. Use a slotted spoon to remove the hush puppies and drain on paper towels.
7. Serve warm as a delicious side or appetizer.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 350°F (175°C) and bake hush puppies on a baking sheet for 10 minutes, or until heated through.
