Traditional Smoked Beef Brisket

Ingredients
12 lbs beef brisket
1/4 cup kosher salt
1/4 cup black pepper
1/4 cup paprika
2 tbsp garlic powder
2 tbsp onion powder
1 tbsp cayenne pepper
1/2 cup mustard
1 cup apple cider vinegar
2 cups water
Hickory wood chips
Instructions
1. Prepare the brisket by trimming excess fat, leaving about 1/4 inch fat cap.
2. In a bowl, combine kosher salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to form a dry rub.
3. Rub the brisket with mustard, then apply the dry rub generously on all sides.
4. Preheat the smoker to 225°F and add hickory wood chips to the smoker box.
5. Place the brisket fat-side up on the smoker rack.
6. Smoke the brisket for 6 hours, maintaining the temperature at 225°F.
7. Mix apple cider vinegar and water in a spray bottle and spritz the brisket every hour.
8. After 6 hours, wrap the brisket in butcher paper or foil and continue smoking for 4 more hours or until internal temperature reaches 195°F.
9. Remove brisket from the smoker and let it rest for at least 30 minutes before slicing.
Storage
Store leftover brisket in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat brisket by wrapping it in foil and warming in a 250°F oven until hot, or microwave slices on medium heat until warmed through.
