Traditional Roasted Butternut Squash

Ingredients
1 medium butternut squash (about 3 lbs)
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
Instructions
1. Preheat your oven to 400°F (200°C).
2. Peel the butternut squash, then cut it in half lengthwise and scoop out the seeds.
3. Cut the squash into 1-inch cubes and place them in a large bowl.
4. Add olive oil, salt, black pepper, rosemary, and thyme to the bowl, and toss the squash until evenly coated.
5. Spread the seasoned squash cubes in a single layer on a baking sheet lined with parchment paper.
6. Roast the squash in the preheated oven for 25-30 minutes, or until the cubes are tender and golden brown, stirring halfway through cooking.
7. Remove from oven and serve warm.
Storage
Store leftover roasted butternut squash in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in the oven at 350°F (175°C) for 10-15 minutes or until warmed through, or microwave on high for 2-3 minutes.
