Traditional Roast Rack of Lamb

Ingredients

2 racks of lamb, frenched (about 1.5 lbs each)
2 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
Salt and pepper to taste
1 lemon, zested

Instructions

1. Preheat your oven to 450°F (232°C).
2. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper.
3. Rub the herb mixture evenly over the lamb racks.
4. Place the lamb racks on a roasting pan, bone side down.
5. Roast in the preheated oven for 15 minutes.
6. Reduce the oven temperature to 325°F (163°C) and continue roasting for an additional 20-25 minutes for medium-rare, or until desired doneness is reached.
7. Remove from oven and let rest for 10 minutes before slicing.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Preheat oven to 300°F and reheat lamb on a baking sheet for about 10 minutes, or until warmed through.
