Traditional Roast Leg of Lamb

Ingredients

1 leg of lamb (about 5 lbs)
3 cloves garlic, sliced
2 tbsp fresh rosemary, chopped
2 tbsp olive oil
1 lemon, zested
1 tbsp salt
1 tsp black pepper
2 cups chicken broth
1/4 cup white wine

Instructions

1. Preheat your oven to 375°F.
2. Using a sharp knife, make small incisions in the lamb and insert garlic slices and rosemary into each slit.
3. Rub the lamb with olive oil, lemon zest, salt, and black pepper.
4. Place the lamb on a rack in a roasting pan and pour chicken broth and white wine into the pan.
5. Roast the lamb in the preheated oven for about 1.5 hours, or until the internal temperature reaches 135°F for medium-rare.
6. Remove the lamb from the oven, cover it with foil, and let it rest for 15 minutes before carving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat slices in a preheated oven at 300°F until warmed through.
