Traditional Roast Chicken

Ingredients
5 lb whole chicken
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 lemon, halved
4 garlic cloves, crushed
1 bunch fresh thyme
1 bunch fresh rosemary
1 onion, quartered
2 carrots, cut into chunks
2 celery stalks, cut into chunks
Instructions
1. Preheat oven to 425°F (220°C).
2. Rinse the chicken inside and out, pat dry with paper towels.
3. Rub the chicken with olive oil, salt, and pepper.
4. Stuff the cavity with lemon halves, garlic, and half the herbs.
5. Scatter onion, carrots, and celery in a roasting pan, place chicken on top.
6. Roast for 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C).
7. Let rest for 10 minutes before carving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in an oven preheated to 350°F (175°C) for 15-20 minutes or until heated through.
