Ingredients
1 whole beef tenderloin (about 4 to 5 pounds)
2 tablespoons olive oil
2 teaspoons salt
1 teaspoon black pepper
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
4 cloves garlic, minced
Instructions
1. Preheat your oven to 425°F.
2. Trim any silver skin and excess fat from the tenderloin.
3. Rub the tenderloin with olive oil, salt, and black pepper.
4. Sprinkle the rosemary, thyme, and minced garlic evenly over the meat.
5. Place the tenderloin on a rack in a roasting pan.
6. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 135°F for medium-rare.
7. Remove the tenderloin from the oven and cover with foil. Let it rest for 10-15 minutes before slicing.
Storage
Store leftover roast beef tenderloin in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat slices in a skillet over medium heat until warmed through or in a 300°F oven for 10 minutes.
