Ingredients

1 cup of uncooked white rice
2 cups of chicken broth
1 pound of chicken breast, cubed
1 tablespoon of olive oil
1 cup of diced carrots
1 cup of diced celery
1 cup of frozen peas
1 teaspoon of salt
1 teaspoon of black pepper
1 teaspoon of dried thyme
1 cup of shredded cheddar cheese

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a medium-sized pot, bring the chicken broth to a boil.
3. Add the uncooked rice, reduce heat, cover, and let simmer for 15 minutes until the rice is tender.
4. In a skillet, heat the olive oil over medium heat and add the cubed chicken breast. Cook until browned on all sides.
5. Add the diced carrots and celery to the skillet and sauté until slightly softened.
6. In a large mixing bowl, combine the cooked rice, chicken, vegetables, salt, black pepper, and dried thyme.
7. Transfer the mixture to a greased casserole dish and top evenly with the shredded cheddar cheese.
8. Bake in the preheated oven for 25 minutes or until the cheese is melted and golden brown.
9. Let it cool for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place a portion in the microwave for 2-3 minutes or until heated through.
