Traditional Rhubarb Delight Pie

Ingredients

2 cups chopped rhubarb
1 1/3 cups granulated sugar
1/3 cup all-purpose flour
1 tablespoon unsalted butter
1 double crust pie pastry (9-inch)
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 425°F (220°C).
2. Roll out half of the pastry and line a 9-inch pie dish, trimming any excess.
3. In a large mixing bowl, combine rhubarb, sugar, flour, cinnamon, and salt until rhubarb is well coated.
4. Pour the rhubarb mixture into the pie crust, spreading it evenly.
5. Dot the filling with small pieces of butter and sprinkle with vanilla extract.
6. Roll out the remaining pastry and cover the pie, sealing and fluting the edges.
7. Cut slits on the top crust to allow steam to escape.
8. Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 35-40 minutes, or until the crust is golden brown.
9. Remove the pie from the oven and let it cool slightly before serving.

Storage

Store the pie in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, warm slices in a 350°F oven for about 10 minutes or microwave for 30 seconds to 1 minute.
