Ingredients

1 9-inch pie crust (homemade or store-bought)
2 cups pumpkin puree
1 cup granulated sugar
1/2 cup packed brown sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
3 large eggs
1 1/2 cups evaporated milk

Instructions

1. Preheat your oven to 425°F (220°C).
2. Roll out the pie crust and fit it into a 9-inch pie pan, crimping the edges.
3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, salt, cinnamon, ginger, cloves, and nutmeg until well blended.
4. Lightly beat eggs in a separate bowl, then stir into the pumpkin mixture.
5. Gradually stir in evaporated milk until smooth.
6. Pour the filling into the prepared crust.
7. Bake in the preheated oven at 425°F (220°C) for 15 minutes.
8. Reduce temperature to 350°F (175°C) and continue baking for 40 to 50 minutes or until the filling is set and a knife inserted near the center comes out clean.
9. Cool on a wire rack for at least 2 hours before serving.

Storage

Store the pie covered in the refrigerator for up to 4 days.

Reheating

Reheat slices in the microwave for about 30-45 seconds or until warm.
