Traditional Pinto Beans

Ingredients

1 lb dried pinto beans
6 cups water
1 medium onion, chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp cumin
1 tsp chili powder
1 bay leaf
1 tbsp olive oil

Instructions

1. Rinse and sort the pinto beans, removing any debris.
2. In a large pot, combine beans and water, then bring to a boil.
3. Reduce heat, cover, and simmer for 2 hours, stirring occasionally.
4. In a skillet, heat olive oil over medium heat, add onion and garlic, and sauté until translucent.
5. Add sautéed onion and garlic to the beans along with salt, pepper, cumin, chili powder, and bay leaf.
6. Continue to simmer for an additional hour or until beans are tender.
7. Remove bay leaf before serving.

Storage

Store leftover pinto beans in an airtight container in the refrigerator for up to 5 days.

Reheating

To reheat, place beans in a saucepan over medium heat, stirring occasionally until warmed through.
