Traditional Pierogi Casserole

A delightful casserole that captures the essence of classic pierogis with layers of pasta, creamy mashed potatoes, cheese, and savory onions, perfect for family dinners or special gatherings.

Ingredients

12 lasagna noodles
4 cups mashed potatoes
2 cups shredded cheddar cheese
1 cup sour cream
1 cup diced onions
1/2 cup butter
Salt and pepper to taste
2 tablespoons chopped fresh chives

Instructions

1. Preheat oven to 350°F (175°C).
2. Cook lasagna noodles according to package instructions; drain and set aside.
3. In a skillet, melt butter over medium heat and sauté onions until golden brown.
4. In a large bowl, mix mashed potatoes with sour cream, half of the cheese, and sautéed onions; season with salt and pepper.
5. Grease a 9x13 inch baking dish and place a layer of noodles on the bottom.
6. Spread half of the potato mixture over the noodles.
7. Repeat layers of noodles and potato mixture, ending with noodles.
8. Top with remaining cheese and cover with foil.
9. Bake in preheated oven for 30 minutes.
10. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
11. Garnish with chopped chives before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat portions in the microwave for 2-3 minutes or in a preheated oven at 350°F (175°C) for 15 minutes.
