Ingredients

1 double-crust pie pastry
6 cups sliced fresh peaches
1 cup granulated sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter
1 tablespoon lemon juice
1 tablespoon milk
1 tablespoon sugar

Instructions

1. Preheat oven to 425°F (220°C).
2. Roll out half of the pastry and fit into a 9-inch pie plate.
3. In a large bowl, combine peaches, sugar, flour, cinnamon, nutmeg, and lemon juice. Mix well.
4. Pour peach mixture into prepared pastry shell. Dot with butter.
5. Roll out remaining pastry and place over filling. Seal edges and cut slits for steam.
6. Brush top with milk and sprinkle with sugar.
7. Bake for 45-50 minutes until crust is golden and filling is bubbly.
8. Cool on a wire rack before serving.
