Traditional Pea Soup

A heartwarming and timeless pea soup that combines the sweetness of peas with savory herbs for a comforting dish.

Serves: 6

Ingredients

1 lb dried split peas
6 cups water
1 ham bone or 2 smoked ham hocks
1 large onion, chopped
2 carrots, diced
2 ribs celery, sliced
2 cloves garlic, minced
1 bay leaf
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1 tbsp fresh parsley, chopped

Instructions

1. Rinse and sort the split peas, removing any debris.
2. In a large pot, combine the split peas, water, and ham bone. Bring to a boil.
3. Reduce heat to low, cover, and simmer for 1 hour.
4. Add onion, carrots, celery, garlic, bay leaf, salt, black pepper, and thyme.
5. Continue to simmer for another 45-60 minutes, or until peas and vegetables are tender.
6. Remove the ham bone, shred any meat, and return the meat to the pot.
7. Discard bay leaf and adjust seasoning if necessary.
8. Serve hot, garnished with fresh parsley.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat, stirring occasionally, until hot. Add water if the soup is too thick.
