Ingredients

8 flour tortillas
2 cups shredded Oaxaca cheese
1 cup sliced mushrooms
1/2 cup chopped fresh cilantro
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

1. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil.
2. Place a tortilla in the skillet, sprinkle 1/4 cup of cheese on one half, along with a few mushroom slices and a pinch of cilantro.
3. Fold the tortilla in half and press gently with a spatula.
4. Cook for 2-3 minutes on each side until the cheese is fully melted and the tortilla is golden brown.
5. Repeat for remaining tortillas and ingredients.
6. Slice into wedges and serve immediately.

Storage

Store leftover quesadillas in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat quesadillas in a skillet over medium heat for 2-3 minutes per side until warmed through and crisp.
