Traditional Mexican Chicken Stew

Ingredients
2 lbs chicken thighs
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
1 jalapeño, seeded and chopped
2 bell peppers, chopped
1 can (14.5 oz) diced tomatoes
1 cup chicken broth
1 tsp cumin
1 tsp paprika
1 tsp oregano
Salt and pepper to taste
1 lime, juiced
1/4 cup fresh cilantro, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chicken thighs and cook until browned on all sides. Remove and set aside.
3. In the same pot, sauté onions and garlic until fragrant.
4. Add jalapeño and bell peppers, cooking until softened.
5. Stir in diced tomatoes, chicken broth, cumin, paprika, oregano, salt, and pepper.
6. Return chicken to the pot and bring the mixture to a simmer.
7. Cover and cook on low heat for 45-50 minutes, until chicken is tender.
8. Stir in lime juice and cilantro just before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over medium heat until warmed through.
