Traditional Italian Pasta Salad

Ingredients
1 lb rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup bell peppers, diced
1/2 cup red onion, thinly sliced
1/2 cup black olives, sliced
1/2 cup mozzarella cheese, cubed
1/4 cup fresh basil, chopped
1/4 cup Italian parsley, chopped
1/3 cup extra virgin olive oil
3 tbsp red wine vinegar
1 clove garlic, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water.
2. In a large bowl, combine cherry tomatoes, cucumber, bell peppers, red onion, black olives, mozzarella cheese, basil, and parsley.
3. In a small bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper to make the dressing.
4. Add the cooked pasta to the vegetable mixture.
5. Drizzle the dressing over the pasta salad and toss to combine.
6. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Storage
Store the pasta salad in an airtight container in the refrigerator for up to 3 days.
Reheating
Toss the pasta salad gently and serve cold, or let it sit at room temperature for 15 minutes before serving.
