Traditional Hungarian Goulash

Ingredients
2 lbs beef chuck, cut into 1-inch cubes
2 tbsp vegetable oil
2 large onions, chopped
3 cloves garlic, minced
2 tbsp Hungarian sweet paprika
1 tbsp tomato paste
1 tsp caraway seeds
1 tsp salt
1/2 tsp black pepper
4 cups beef broth
2 large carrots, sliced
2 medium potatoes, peeled and diced
1 red bell pepper, chopped
1 green bell pepper, chopped
Instructions
1. Heat oil in a large pot over medium heat. Add onions and garlic, and sauté until onions are translucent.
2. Stir in paprika, tomato paste, and caraway seeds, cooking for another minute.
3. Add beef cubes and cook until browned on all sides.
4. Season with salt and black pepper, then pour in beef broth.
5. Bring to a boil, reduce heat, and simmer for 1 hour.
6. Add carrots, potatoes, and bell peppers.
7. Simmer for an additional 30 minutes, or until vegetables are tender and the beef is fully cooked.
8. Adjust seasoning if necessary and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over medium heat until warmed through, or microwave on medium power, stirring occasionally.
