Traditional Hearty Lentil Soup

Ingredients
2 tbsp olive oil
1 large onion, chopped
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
1 tsp dried thyme
1 tsp ground cumin
1 1/2 cups green or brown lentils, rinsed
8 cups chicken or vegetable broth
1 can (14.5 oz) diced tomatoes
2 bay leaves
Salt and pepper to taste
2 tbsp fresh parsley, chopped
Instructions
1. In a large pot, heat olive oil over medium heat.
2. Add onion, carrots, and celery, and sauté until vegetables are tender, about 5-7 minutes.
3. Stir in garlic, thyme, and cumin, cooking for another minute until fragrant.
4. Add lentils, broth, diced tomatoes, and bay leaves. Stir to combine.
5. Bring to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes, or until lentils are tender.
6. Remove bay leaves and season with salt and pepper to taste.
7. Serve hot, garnished with fresh parsley.
Storage
Allow soup to cool to room temperature before transferring to airtight containers. Store in the refrigerator for up to 5 days or in the freezer for up to 3 months.
Reheating
Reheat on the stovetop over medium heat until warmed through, stirring occasionally. Alternatively, microwave in a microwave-safe bowl until heated thoroughly.
