Prep time: 15 minutesCook time: 20 minutesServes: 4
Ingredients
1 lb ground beef
2 cups shredded cheddar cheese
1 cup diced onions
1 cup diced bell peppers
2 cloves minced garlic
1 can (15 oz) red enchilada sauce
10 corn tortillas
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp vegetable oil
Fresh cilantro, chopped (for garnish)
Sour cream (optional, for serving)
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, heat vegetable oil over medium heat. Add diced onions, bell peppers, and minced garlic. Sauté until onions are translucent, about 5 minutes.
3. Add ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 7 minutes, then drain excess fat.
4. Stir in cumin, chili powder, salt, and black pepper. Mix well and remove from heat.
5. Warm corn tortillas on a skillet until pliable. Spoon the beef mixture into each tortilla, sprinkle with shredded cheese, and roll them up.
6. Spread a small amount of enchilada sauce on the bottom of a baking dish. Place the rolled tortillas seam-side down into the dish.
7. Pour remaining enchilada sauce over the tortillas and sprinkle with remaining cheese.
8. Bake in the preheated oven for 20 minutes, or until cheese is melted and bubbly.
9. Garnish with chopped cilantro before serving. Optionally, serve with sour cream.
Storage
Store leftover enchiladas in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the enchiladas in a microwave-safe dish and heat on medium power for 2-3 minutes, or until warmed through. Alternatively, reheat in a 350°F (175°C) oven for 10-15 minutes.
