Ingredients
8 lamb chops, about 1 inch thick
1/4 cup olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon kosher salt
1/2 teaspoon black pepper
Lemon wedges for serving
Fresh parsley for garnish
Instructions
1. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
2. Rub the herb mixture over the lamb chops and let them marinate for at least 30 minutes at room temperature.
3. Preheat the grill to medium-high heat.
4. Place lamb chops on the grill and cook for 4-5 minutes per side for medium-rare, or adjust time for desired doneness.
